Farmer's Breakfast

My all time favorite breakfast is something my mom used to cook when I was a kid. It really doesn't need a recipe, but here it is (approximated):

8 white potatoes, peeled and cubed
oil for pan frying
1/4 to 1/2 cup cooked crumbled bacon (I buy mine at Sam's Club, Hormel Crumbled Bacon)
9-12 eggs, scrambled
salt and pepper for seasoning

Put the oil in a large nonstick frying pan (I use a chicken fryer), enough to cover the bottom with about 1/4 inch, on med high until hot. Add potatoes and fry, stirring occasionally, about 15-20 minutes, or until potatoes are tender inside and crispy on the outside. Drain oil and return potatoes to the heat. Salt and pepper to taste. Add bacon and stir for a couple minutes, until bacon crisps up. Pour eggs over all and cook, stirring constantly, until eggs are done. Season with more salt and pepper.

VAriation: You can add onions with the potatoes, add sausage or ham with or instead of the bacon, top with shredded cheese.

This is great leftover, too. You can also freeze it, roll it in tortillas, or pour gravy over the top.

We like to eat this with toast or biscuits on the side and a big glass of milk :o)
