Easy Peasy Salisbury Steaks (serves 8)

2 lb ground beef
1-2 pkg of dry onion soup mix (beefy onion is good, too)
2 eggs
1/2 cup or more of cracker crumbs
few Tbsp water (helps it mix better)
2 pkg brown gravy mix
Water (amount called for on gravy mix packets)

Combine all ingredients in big bowl and form into patties. Fry in large frying pan until done. Remove to paper towel lined plate. Drain off most of the grease from the pan, being careful to leave the meat chunks in there that stuck to the bottom  :o) Add water, stir with whisk to loosen the yummy stuff and then add in the gravy mix and prepare according to instructions. When gravy is almost thick enough, return patties to pan, turning them over once in the gravy so that they are fully coated and covered. Place lid on pan and turn heat to low and simmer for about 10 minutes. Serve over yummy mashed potatoes.

Hubby's favorite dinner: Easy Peasy Salisbury Steaks, mashed potatoes, macaroni and cheese, fried okra. Needless to say, we don't eat THAT combination very often, but it is comfort food to him. Hope you enjoy!
