1-2 lb boneless, skinless chicken breasts, sliced into 1/2" slices
1 Tbsp. olive oil (or other cooking oil)
1 pkg Hidden Valley Ranch dry ranch dressing mix
1/4 c. water
8 oz. cream cheese
Warm oil in 10" skillet, add chicken pieces and cook over med high heat until no longer pink, stirring frequently. Sprinkle dressing mix over the chicken and then add water and stir. Reduce heat and simmer, covered, for about 10 minutes or until chicken is cooked through. Remove from heat and stir in cream cheese until melted. For saucier chicken add more water. If you want it thicker, remove the lid and cook for a couple minutes uncovered to let the water cook off. If you want more sauce, just double the cream cheese and dressing mix. Serve over cooked white or brown rice or cooked egg noodles. Great with steamed broccoli!
